 EASY CHOCOLATE LOVER'S CHEESECAKE

2 packages (8 ox. each) cream cheese, softened
½ cup sugar
2 eggs
1 teaspoon vanilla
1 cup mini chips semi-sweet chocolate 
1 graham cracker crumb crust (6 oz.)
chocolate topping
1/3 mini chips semi-sweet chocolate
2 tablespoon whipping cream (i will be use half & half )

1. Heat oven to 450°.  In small mixer bowl, beat cream cheese and sugar until well blended.  Add eggs and vanilla; beat well.  Stir in small chocolate chips; pour batter into crust.

2. Bake 10 minutes; without opening door, reduce temperature to 250°F.  Continue baking 20 to 25 minutes or just until set.  Cool completely. 

3. Cool; refrigerate several hours.  Spread chocolate topping over top.  Refrigerate several minutes or just until set.  Cut into wedges; seve cold.

Irish Bread

Irish Bread
3c. flour
pinch of salt
4 tsp. baking powder
1 c. milk
1 c. raisins
1/2 c. sugar
1 egg
1 Tbsp. cooking oil

Sift Flour, salt, baking powder, sugar, and raisins in to large bowl.
Mix well
In small bowl, put milk, egg and cooking oil.
Mix with fork.
Add liquid to dry ingredient quickly
Mix well
Bake in loaf pan lined with wax paper at 350 for 45 minutes
or until crust is brown.
Test for doneness with toothpick
My Mother did not get this reicpe from my grand mother but tried for years to get an Irish Bread recipe exactly like my grandmother and finally she found it in a cookbook from Waltham All of the Luvisi family think it is good
